A grape variety and the intensely sweet, sun-dried fortified wine made from it. PX-seasoned casks give raisin, fig and molasses along with marked sweetness and strong colour.
Where it is defined
Protected under the DO Jerez-Xérès-Sherry and DO Montilla-Moriles specifications; undefined in whisky law.
Worth knowing
PX residue in the wood contributes actual sugar and glycerol, which is why PX finishes read as sweeter rather than merely fruitier. This is permitted in Scotch because it comes from the cask — adding sweetening to the whisky itself is prohibited.
